Food today is more convenient, more available and easier to fit into busy lives than ever before.

The broader health context is significant. The World Health Organization estimates that 2.5 billion adults were living with overweight in 2022, including more than 890 million with obesity. These characteristics do not make a meal inherently “good” or “bad.” But they help explain why the rate at which a meal is processed deserves more attention. Reviews of the food matrix show that physical structure can affect the extent and kinetics of nutrient availability during digestion. [4]

A meta-analysis of 25 randomized crossover trials involving 369 participants found that structural characteristics of starchy foods - including amylose content, gelatinization and particle integrity - materially changed post-meal glucose and insulin responses. [5]
